  • 4 tablespoons unsalted butter
  • 6 cups low-sodium beef broth
  • 2 teaspoons balsamic vinegar
  • 1 French baguette, sliced
  • Gruyère cheese, shredded

Instructions

  1. Slice the onions into thin strips.
  2. Caramelize the onions in a pot with melted butter over medium heat, stirring occasionally for 30-40 minutes.
  3. Deglaze the pot with balsamic vinegar, scraping up any brown bits.
  4. Add the beef broth and simmer for 20-30 minutes.
  5. Prepare the baguette by slicing and toasting until golden.
  6. Ladle the soup into bowls, top with baguette slices and Gruyère cheese.
  7. Broil the bowls until cheese is melted and bubbly.
