Ingredients

  • Cupcakes (1 batch of your favorite vanilla cake recipe)
  • Unsalted Butter (1 cup, softened)
  • Powdered Sugar (4 cups)
  • Milk (2-3 tablespoons)
  • Vanilla Extract (2 teaspoons)
  • Chocolate Chips (½ cup for frosting and extra for popping into the cupcakes)
  • Candy Eyes (for decorating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Mix the Cupcake Batter: Cream together the softened butter and granulated sugar until light and fluffy—about 3 minutes. Beat in the eggs one at a time and add the vanilla extract. In a separate bowl mix together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk.
  3. Bake the Cupcakes: Spoon the batter into your lined cupcake pan, filling each cup about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean. Let them cool completely on a wire rack.
  4. Prepare the Buttercream: Combine softened butter and powdered sugar in a bowl. Mix on low speed and add the milk until smooth and fluffy.
  5. Fill the Cupcakes with Chocolate Chips: Hollow out the top of each cupcake and fill with chocolate chips.
  6. Frost with Buttercream: Use a piping bag to frost the top of each cupcake.
  7. Decorate with Candy Eyes: Place candy eyes atop the frosting for a fun decoration.
