Ginger Garlic Chicken Noodle Soup

A warming and comforting chicken noodle soup with ginger and garlic, perfect for chilly evenings.

  • 2 cups chicken, cooked and shredded
  • 4 cups chicken broth
  • 1 cup egg noodles
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil

Instructions

  1. Sauté the aromatics by heating the olive oil in a large pot over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  2. Add the sliced carrots and celery, stirring for about 3-4 minutes until they start softening.
  3. Pour in the chicken broth, giving everything a gentle stir and bring to a simmer.
  4. Add the egg noodles and cook according to package instructions, usually around 6–8 minutes.
  5. Stir in the shredded chicken, soy sauce, and chopped green onions. Adjust seasoning with salt and pepper.
  6. Let everything mingle on heat for another 2 minutes before serving.

Notes

Garnish with extra green onions or sprinkle with sesame seeds before serving. Customize with extra ingredients as desired.
