Gougères: The French Cheese Puffs

Delight in these airy French cheese puffs, known as gougères, that are both easy to make and irresistibly delicious.

  • 1 cup water
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cut into cubes
  • 1 cup all-purpose flour
  • 4 large eggs
  • Dash of nutmeg
  • Pinch of ground pepper
  • 1 cup gruyère cheese, shredded (plus 1/2 cup for sprinkling)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Boil the water and melt the butter in a medium saucepan over medium-high heat.
  3. Add the flour, stirring vigorously until a smooth ball forms.
  4. Cool the mixture for about 5 minutes.
  5. Incorporate the eggs one by one, mixing well after each addition.
  6. Season with nutmeg and ground pepper, then fold in the gruyère cheese.
  7. Shape the mixture into small mounds on the baking sheet, spaced about 1 inch apart.
  8. Sprinkle extra cheese on top of each mound.
  9. Bake for 20-25 minutes until puffed and golden.
  10. Cool slightly before serving.

Notes

These gougères are best enjoyed warm. Pair them with a creamy dip or serve alongside a glass of wine.
