Grilled Halloumi Skewers

A vibrant, flavor-packed dish of grilled halloumi skewers infused with zesty lemon and fresh thyme, perfect for summer gatherings.

  • 1 pound halloumi cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves, chopped
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Wooden skewers (soaked in water)

Instructions

  1. Prep the Skewers: If using wooden skewers, soak them in water for about 30 minutes.
  2. Cut the Halloumi: Slice the halloumi into 1-inch cubes.
  3. Marinate the Halloumi: In a mixing bowl, whisk together the olive oil, lemon juice, thyme, black pepper, and salt. Add the halloumi cubes and toss until coated. Let marinate for 15–20 minutes.
  4. Assemble the Skewers: Thread the marinated halloumi onto the skewers, adding cherry tomatoes or bell peppers if desired.
  5. Preheat the Grill: Get your grill nice and hot (around medium heat).
  6. Grill the Skewers: Cook for about 4–5 minutes on each side until golden and charred.
  7. Serve and Enjoy: Remove the skewers from the grill and serve warm with garnishes as desired.

Notes

For extra flavor, add in vegetables like cherry tomatoes or peak peppers when assembling skewers.
