Guava Cheesecake

Experience the tropical flavors of guava in this creamy cheesecake topped with fresh guavas, perfect for any occasion!

  • 300 g Tennis biscuits
  • 150 g unsalted butter (melted)
  • 700 g cream cheese
  • 250 g castor sugar
  • 4 extra large eggs
  • 1 tsp vanilla extract
  • 200 ml whipping cream
  • 200 g fresh guavas (for decorating)
  • 500 g fresh guavas (chopped and peeled)
  • 80 g white granulated sugar (for guava puree)
  • 1 tbsp lime juice

Instructions

  1. Crush the biscuits: Place the Tennis biscuits in a food processor and process until fine crumbs.
  2. Combine with butter: Mix biscuit crumbs with melted unsalted butter until coated.
  3. Press into the pan: Transfer mixture to a springform pan and press down to form a crust.
  4. Preheat your oven: Set it to 160°C (320°F).
  5. Whisk the cream cheese: Blend cream cheese and castor sugar until smooth.
  6. Incorporate the eggs: Add eggs one at a time, mixing well after each.
  7. Add vanilla and cream: Pour in vanilla and whipping cream, mixing until smooth.
  8. Blend the guava puree: In a blender, combine chopped guavas, 80 g sugar, and lime juice, and blend until smooth.
  9. Fold in the guava puree: Gently mix pureed guava into the cheesecake filling.
  10. Pour the filling: Pour cheesecake filling over crust and shake gently to settle.
  11. Optional: Place pan in a larger roasting pan with hot water for a water bath.
  12. Bake for 50–60 minutes until edges set and center jiggles slightly.
  13. Cool down: Turn off the oven and let cheesecake cool inside for about 1 hour.
  14. Refrigerate: Transfer to fridge and chill for at least 4 hours or overnight.
  15. Decorate with sliced guavas when ready to serve.
  16. Slice and enjoy your creamy cheesecake!

Serve with a dollop of whipped cream or a scoop of vanilla ice cream for a delightful touch.
