Ingredients

  • Diced leftover ham or smoked ham hocks
  • Canned white beans (like cannellini or great northern)
  • Fresh, diced carrots
  • Diced celery
  • Diced onion
  • Minced garlic
  • Vegetable or chicken broth
  • Bay leaves
  • Thyme
  • Pepper
  • Optional crushed red pepper for heat

Instructions

  1. Prep your veggies: Wash and chop carrots, celery, and onion.
  2. Sauté: In a large pot, heat olive oil and add onion, carrots, and celery. Sauté for 5-7 minutes.
  3. Add garlic and cook for an additional minute.
  4. Incorporate ham and drained, rinsed white beans into the pot.
  5. Pour in the broth and bring to a simmer.
  6. Season: Add bay leaves, thyme, and crushed red pepper and simmer for 30 minutes.
  7. Taste and adjust seasoning as needed.
  8. Serve up in bowls, garnished with fresh herbs if desired.
