Crunchy Honey BBQ Chicken & Creamy Garlic Parmesan Potatoes

A flavorful dish featuring crispy chicken glazed in sweet BBQ sauce paired with creamy garlic parmesan potatoes.

  • 4 chicken breasts (boneless, skinless)
  • 1 cup BBQ sauce
  • 1/2 cup honey
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 pound potatoes (baby gold or red)
  • 1/2 cup sour cream
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet.
  2. Mix the BBQ sauce and honey for the marinade.
  3. Pound chicken breasts to even thickness and season with salt and pepper.
  4. Set up three bowls: one with the BBQ-honey mix, one with breadcrumbs and olive oil, and one for leftover BBQ sauce.
  5. Dip each chicken breast in the BBQ-honey sauce, then dredge it in breadcrumbs.
  6. Drizzle olive oil over the coated chicken and bake for 25-30 minutes until golden brown.
  7. Wash and quarter the potatoes; boil until fork-tender.
  8. Add sour cream, parmesan, and garlic to the potatoes, mashing until creamy.
  9. Rest the chicken for 5 minutes before serving with potatoes.

Notes

Consider adding cayenne for spice or nutritional yeast for a dairy-free version of the potatoes.
