Mexican Street Corn Salad

A vibrant salad capturing the essence of classic Mexican street corn, perfect for gatherings or cozy dinners.

  • 4 cups corn kernels (fresh, canned, or frozen)
  • 2 tbsp butter (for charring)
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream (or Mexican crema)
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 clove garlic (minced)
  • 1/2 cup cotija cheese (crumbled)
  • 1/4 cup fresh cilantro (chopped)
  • 3 green onions (sliced)
  • Salt and black pepper (to taste)
  • Lime wedges (for serving)

Instructions

  1. Heat a large skillet over medium-high heat. Add the butter and let it melt.
  2. Add the corn kernels to the skillet, allowing them to char for about 8-10 minutes.
  3. In a large mixing bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and minced garlic until well combined.
  4. Once the corn is charred, allow it to cool, then add it to the bowl with the dressing.
  5. Add the crumbled cotija cheese, chopped cilantro, and sliced green onions. Fold everything together.
  6. Taste and adjust flavors to your liking.

Notes

Serve warm or cold, garnished with lime wedges. For variations, consider adding black beans or diced avocado.
