Raspberry Coconut Mojito

A refreshing and vibrant drink that combines fresh raspberries, creamy coconut, and a hint of mint – perfect for summer!

  • 1012 Fresh raspberries
  • 1 oz Coconut cream
  • 10 Fresh mint leaves (plus extra for garnish)
  • 1 oz Fresh lime juice (juice of half a lime)
  • 12 tablespoons Sugar (or honey)
  • Club soda
  • Ice

Instructions

  1. Prepare your ingredients: Start by washing your fresh raspberries and mint leaves. Set aside a couple of mint leaves for garnishing later.
  2. Muddle the raspberries and mint: In a sturdy glass or cocktail shaker, add fresh raspberries and mint leaves. Gently press them together to release their essential oils and juices.
  3. Add the lime juice and sugar: Pour in lime juice and add sugar. Muddle gently to help dissolve the sugar and blend the flavors.
  4. Incorporate the coconut cream: Add coconut cream to the muddled mixture and stir gently.
  5. Strain into a glass: Strain the mixture into a highball glass filled with ice or leave the muddled ingredients in for a rustic presentation.
  6. Top with club soda: Pour club soda over the muddled mix, filling the glass, and give it a light stir.
  7. Garnish and serve: Add a fresh mint leaf, whole raspberries, and a lime wedge for garnish.

Notes

For variations, try adding different berries, swapping out coconut cream for coconut milk, or adding a shot of rum for an adult version.
