Herb Roasted Chicken

A flavorful herb roasted chicken with crispy skin and juicy meat, perfect for family dinner or gatherings.

Ingredients

  • Whole Chicken (4–5 lbs)
  • 68 cloves Garlic
  • 23 sprigs Fresh Rosemary
  • 23 sprigs Fresh Thyme
  • ¼ cup Olive Oil
  • 1 Lemon
  • Salt and Pepper to taste
  • Veggies for Roasting (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat your whole chicken dry with paper towels and season the cavity with salt and pepper.
  3. Combine minced garlic, chopped rosemary, thyme, olive oil, lemon juice, zest, and additional salt and pepper in a bowl to make a paste.
  4. Lift the skin of the chicken and spread the herb paste underneath, then rub any remaining paste on the outside.
  5. Chop veggies and scatter them around the chicken in the baking dish.
  6. Roast the chicken for about 1 hour and 20 minutes, basting halfway through.
  7. Let it rest for 15–20 minutes after removing from the oven.
  8. Carve and serve on a platter with roasted veggies.

Notes

Experiment with different herbs or add spices for variations. A meat thermometer should read 165°F (75°C) in the thigh for doneness.
