  • 1 lb Italian sausage, casings removed (mild or hot)
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 1 (14.5 oz) can crushed tomatoes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta: Start by bringing a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package directions—usually about 8-10 minutes for al dente.
  2. Sauté the sausage: While your pasta cooks, heat olive oil in a large skillet over medium heat. Once hot, add the sausage and brown for about 5-7 minutes.
  3. Add onions and garlic: Toss in the onion and minced garlic. Cook until the onions are translucent—about 3-4 minutes.
  4. Incorporate the bell peppers: Add the sliced bell peppers and sauté for another 5 minutes until they soften.
  5. Deglaze with wine: Pour in the white wine, stirring well and letting it simmer for about 2-3 minutes.
  6. Add tomatoes: Stir in the crushed tomatoes and let it simmer on low heat for about 10 minutes.
  7. Combine with pasta: Once the pasta is cooked, toss it into the skillet with the sauce.
  8. Finish with fresh herbs: Once everything is combined and heated through, add the fresh parsley and basil.

Notes

You can substitute the sausage with mushrooms for a vegetarian option. Always taste and adjust salt and pepper to your liking.
