Jack-o’-Lantern Stuffed Peppers

Festive stuffed peppers carved like jack-o’-lanterns, filled with a savory mixture of beef, rice, and spices, perfect for Halloween gatherings.

  • 4 large orange bell peppers
  • 1 pound ground beef
  • 1 cup cooked jasmine rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • Spices (Italian seasoning, salt, pepper)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the peppers and scoop out the insides. Carve jack-o’-lantern faces.
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic; sauté until translucent.
  3. Add the ground beef, breaking it apart as it cooks until browned. Season with spices.
  4. Stir in the cooked rice and tomato sauce until combined and heated through.
  5. Fill each pepper with the beef-rice mixture and top with cheese.
  6. Bake the peppers in a dish with water at the bottom for steam. Cover with foil and bake for 30-35 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
  7. Garnish with fresh parsley or basil before serving.

Notes

These stuffed peppers can be made ahead of time and refrigerated until ready to bake. They freeze well too!
