  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Prep the chicken: Start by patting your chicken breasts dry with paper towels. Season both sides with salt and black pepper.
  2. Sear the chicken: Heat the olive oil in a skillet over medium-high heat, add chicken, and cook for about 6-7 minutes on each side.
  3. Create the salsa: In a bowl, combine diced peaches and jalapeños. Drizzle in honey and apple cider vinegar, then fold together.
  4. Make the sauce: In a saucepan, mix water and cornstarch until dissolved. Add to the skillet, scraping up bits, and simmer until thickened.
  5. Combine everything: Let the chicken rest, slice it, drizzle sauce over it, and top with salsa.
  6. Plate it up: Layer chicken on a platter, scatter the salsa over it, and garnish with cilantro.

Notes

For a smoky flavor, try grilling the chicken. You can also swap peaches for mango or pineapple for a tropical twist.
