Jalapeño Peach Chicken

A delightful dish that combines sweet peaches with a spicy kick from jalapeños, perfect for impressing guests or treating yourself.

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Pat the chicken breasts dry with paper towels and season with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown.
  4. While the chicken cooks, combine the diced jalapeños, peaches, honey, apple cider vinegar, water, and cornstarch in a bowl.
  5. Pour the peach mixture over the cooked chicken and reduce the heat to medium-low.
  6. Cover and let it simmer for about 10 minutes, allowing flavors to meld.
  7. Taste and adjust seasoning if needed.

Notes

Serve with fluffy rice or quinoa and garnish with fresh cilantro or green onions. This dish can also be marinated and grilled for a smoky flavor.
