Juicy Grilled California Avocado Chicken

A delightful dish featuring juicy grilled chicken breasts paired with creamy California avocados and sweet cherry tomatoes.

  • 4 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by combining lime juice, olive oil, garlic powder, cumin, salt, and pepper in a bowl. Whisk together, then pour over the chicken in a resealable bag. Refrigerate for at least 30 minutes.
  2. Preheat the grill to medium-high, or heat a grill pan on medium and brush with olive oil.
  3. Prepare the avocados by halving them, removing the pit, and scooping a bit of flesh out.
  4. Grill the marinated chicken breasts for about 6-7 minutes on each side, until an internal temperature of 165°F is reached.
  5. Grill the cherry tomatoes for the last 3-5 minutes with olive oil, salt, and pepper.
  6. Assemble the dish by resting the grilled chicken, combining it with cherry tomatoes and avocados, garnished with fresh cilantro and more lime juice if desired.

Notes

For added flavor, consider marinating the chicken overnight. Use a meat thermometer to ensure the chicken is perfectly cooked. Feel free to serve with balsamic glaze or extra lime juice.
