  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce (sugar-free for keto)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup bacon, cooked and crumbled
  • 1/2 cup cream cheese
  • 1 cup cauliflower rice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Green onions, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep a 9×13 inch casserole dish with cooking spray or olive oil.
  3. Mix the shredded chicken and sugar-free BBQ sauce in a large mixing bowl.
  4. Add in the cream cheese and mix until well combined.
  5. Fold in the cauliflower rice and crumbled bacon.
  6. Season with garlic powder, salt, and pepper to taste.
  7. Cheese half of the shredded cheese into the mixture.
  8. Transfer the mixture into the prepared casserole dish and spread evenly.
  9. Top with the remaining cheese.
  10. Bake for 25-30 minutes or until cheese is bubbly and golden.
  11. Garnish with green onions before serving.
