Keto Calzones with Cheesy Spinach Artichoke Filling

Deliciously cheesy Keto Calzones filled with spinach and artichokes, perfect for low-carb diets.

  • 1 cup almond flour
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup canned artichokes, drained and chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • Garlic powder to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, shredded mozzarella, cream cheese, and egg. Mix until a soft dough forms.
  3. Wrap the dough in plastic wrap, and chill in the fridge for about 15-20 minutes.
  4. Combine the spinach, artichokes, ricotta, Parmesan, garlic powder, salt, and pepper in a bowl.
  5. Roll out the chilled dough between two sheets of parchment paper into a rectangle about 1/4-inch thick.
  6. Cut the dough into squares (about 4×4 inches).
  7. Spoon filling into the center of each square and fold over to seal.
  8. Brush with olive oil or an egg wash and bake for 20-25 minutes or until golden brown.

Notes

Serve with marinara sauce and fresh herbs for an added touch.
