Korean Strawberry Milk

  • 1 pound strawberries (finely diced, 2 ¾ cups)
  • ¼ cup cane or brown sugar
  • Squeeze of lemon juice
  • 23 cups unsweetened non-dairy milk

Instructions

  1. Prepare the strawberries by washing them under cool running water, patting them dry, slicing off the green crowns, and finely dicing them.
  2. Sweeten the strawberries in a mixing bowl by sprinkling sugar on top and squeezing in lemon juice. Stir and let sit for 10 minutes.
  3. Blend the marinated strawberries in a blender until you reach the desired consistency.
  4. Mix the blended strawberry mixture with 2 to 3 cups of non-dairy milk in a pitcher and stir well.
  5. Serve the strawberry milk over ice in a glass or serve immediately for a warm treat.

Notes

A few variations include adding cocoa powder or chocolate syrup for a chocolate twist, infusing mint leaves for a refreshing kick, or using coconut milk for a tropical flavor.
