Comforting Lasagna Soup

A cozy and hearty lasagna soup that captures all the rich flavors of traditional lasagna in a warm bowl. Perfect for sharing after a long day.

  • 1 lb Ground Beef
  • 8 Lasagna Noodles
  • 28 oz Canned Tomatoes
  • 1 cup Ricotta Cheese
  • 1 1/2 cups Shredded Mozzarella Cheese
  • 2 tbsp Olive Oil
  • 1 Onion, diced
  • 23 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • Salt and Pepper, to taste
  • Red Pepper Flakes, optional

Instructions

  1. Brown the Meat by heating olive oil in a large pot over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
  2. Sauté the Aromatics by adding diced onion and minced garlic; cook until onion is translucent, about 3-4 minutes.
  3. Add the Tomatoes along with their juices, stirring to combine. Simmer for 10 minutes.
  4. Toss in the Seasonings: add oregano, basil, salt, pepper, and red pepper flakes if desired.
  5. Break the Noodles into thirds and add them along with the broth. Bring to a simmer and cover; cook for 10-15 minutes until noodles are al dente.
  6. Incorporate the Ricotta by stirring it into the soup for added creaminess.
  7. Add Cheese and let the mozzarella melt without bringing the soup back to boil.

Notes

Serve topped with fresh herbs and additional cheese. Pairs well with garlic bread and a side salad.
