Sweet and Zesty Lemon Bars

A delightful dessert that balances a sweet, buttery crust with a tangy, sunshiny lemon filling.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. Cream together the softened butter and powdered sugar until light and fluffy. Add flour and a pinch of salt, mixing until just combined. Transfer to the baking dish and press into an even layer.
  3. Bake the crust for 15-20 minutes, until lightly golden.
  4. Whisk together eggs and granulated sugar. Add lemon juice, zest, baking powder, and salt, mixing until smooth.
  5. Pour the lemon filling over the baked crust and spread evenly.
  6. Bake for another 20-25 minutes, until the edges are set with a slight jiggle in the center.
  7. Cool completely at room temperature, then dust with powdered sugar before slicing.

Notes

Pair with tea or lemonade. These bars can also be garnished with fresh mint leaves or extra lemon zest.
