Low Carb Blackberry Cottage Cheese Chicken Salad

  • 2 cups Cooked Chicken Breast, shredded
  • 1 cup Cottage Cheese, preferably low-fat
  • 1 cup Fresh Blackberries, halved
  • 1 stalk Celery, diced
  • 1/4 cup Red Onion, finely chopped
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prep your chicken by shredding or poaching if needed.
  2. Mix the shredded chicken, cottage cheese, fresh blackberries, diced celery, and chopped red onion in a large bowl.
  3. Dress the mixture with a dressing made of lemon juice, olive oil, salt, and pepper.
