Mango Sago

A light and refreshing dessert made with sweet mangoes and chewy tapioca pearls in a creamy coconut milk bath.

  • 2 ripe mangos, diced
  • 1 cup tapioca sago pearls
  • 1 can (400ml) coconut milk
  • 1/2 cup sugar (adjust to taste)
  • 2 cups water
  • Pinch of salt

Instructions

  1. Rinse the tapioca pearls under cold water to remove excess starch.
  2. Boil 2 cups of water in a medium saucepan.
  3. Add the rinsed sago pearls to the boiling water.
  4. Reduce the heat to a gentle simmer and cook for about 15-20 minutes.
  5. Combine coconut milk, sugar, and a pinch of salt in another saucepan over medium heat.
  6. Stir until the sugar dissolves completely, then remove from heat.
  7. Drain the cooked sago pearls and rinse with cold water.
  8. Combine the sago with the coconut milk mixture in a large bowl.
  9. Fold in the diced ripe mangoes gently.
  10. Let it cool at room temperature for about 30 minutes.
  11. Refrigerate for at least an hour before serving.

Notes

For a vegan-friendly option, ensure that your sugar is bone-char free.
