Shredded Mango Slaw

  • 1 cup shredded carrots
  • 1 ripe mango, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies by shredding the cabbage and carrots and placing them in a large mixing bowl.
  2. Dice the mango and bell pepper, adding them to the bowl.
  3. Mix everything together, incorporating the cilantro.
  4. Make the dressing by whisking lime juice and honey together.
  5. Combine the dressing with the veggies and season with salt and pepper to taste.

Notes
