Marinated Cucumber, Onion, and Tomato Salad

A vibrant and refreshing summer salad featuring crisp cucumbers, sweet onions, and juicy tomatoes, all drizzled with a bright marinade.

  • 2 Cucumbers
  • 1 Red Onion
  • 2 Tomatoes
  • 1/4 Cup Olive Oil
  • 1/4 Cup Vinegar
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Dried Oregano
  • Fresh Parsley for Garnish

Instructions

  1. Prepare the Vegetables: Wash cucumbers and tomatoes under cold running water. Slice cucumbers into thin rounds and chop tomatoes into bite-sized pieces. Slice red onion thinly.
  2. Make the Marinade: In a mixing bowl, combine olive oil and vinegar, then whisk together. Add salt, pepper, and dried oregano; taste and adjust.
  3. Toss it All Together: Add chopped cucumbers, tomatoes, and sliced onions to the bowl; toss to coat each vegetable in the marinade.
  4. Chill and Allow Flavors to Marry: Let the salad sit at room temperature for 15 minutes or refrigerate for 30 minutes.
  5. Dress and Garnish to Serve: Toss the salad again before serving and garnish with freshly chopped parsley.

Notes

This salad is best enjoyed fresh, but you can store components separately for a day in advance.
