Marry Me Tofu

A creamy, savory tofu dish that can impress your loved ones, perfect for special occasions or cozy weeknights.

Ingredients

  • 16 ounces super firm tofu (or extra-firm, pressed well)
  • 4 tablespoons cornstarch
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons avocado oil (or other high-heat safe oil)
  • 5 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt (more or less to taste)
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup Cashew Cream (or other vegan cream)
  • 2 cups baby spinach (sliced or chopped)
  • 45 fresh basil leaves (chopped)
  • 1/2 cup Vegan Parmesan (optional)

Instructions

  1. Press the tofu by draining it and wrapping it in a towel with a weight on top for about 20 minutes.
  2. Prepare the tofu coating by mixing cornstarch, nutritional yeast, salt, and pepper in a bowl.
  3. Cube the pressed tofu into bite-sized pieces.
  4. Coat the tofu cubes in the cornstarch mixture until evenly covered.
  5. Heat the avocado oil in a skillet over medium-high heat and add the tofu cubes without overcrowding.
  6. Fry the tofu until golden brown and crispy, about 3-4 minutes per side.
  7. Sauté the minced garlic in the same skillet until fragrant.
  8. Add the chopped sun-dried tomatoes, oregano, and red chili flakes, simmering for about 2 minutes.
  9. Create the sauce by pouring in the vegetable broth and tomato paste, allowing it to thicken for 3-5 minutes.
  10. Finish with cashew cream and spinach, cooking until the spinach wilts.
  11. Return the crispy tofu to the skillet, folding it into the creamy sauce.
  12. Garnish with fresh basil and vegan parmesan, then serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This dish can be served over rice, polenta, or with crusty bread for sopping up the sauce.
