Maple Dijon Chicken Salad

A refreshing and hearty Maple Dijon Chicken Salad that combines tender chicken, mixed greens, crunchy vegetables, and a sweet tangy dressing.

  • 2 cups cooked chicken breast, shredded
  • 4 cups mixed greens (spinach, arugula, baby kale)
  • 1/2 red onion, thinly sliced
  • 1 cup celery, chopped
  • 1/2 cup dried cranberries or cherries
  • 1/2 cup walnuts or pecans, chopped
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Instructions

  1. Prepare the chicken by seasoning it with salt and pepper, then either bake at 375°F (190°C) for 20-25 minutes or poach until fully cooked. Shred and let cool.
  2. Chop the veggies: dice the celery, slice the red onion, and roughly chop the mixed greens.
  3. Make the dressing by whisking together the olive oil, Dijon mustard, maple syrup, lemon juice, and salt in a small bowl until smooth.
  4. Combine the shredded chicken, mixed greens, chopped celery, sliced red onion, cranberries or cherries, and walnuts or pecans in a large bowl. Drizzle dressing over and toss gently.
  5. Adjust the seasoning to taste with salt, pepper, or a touch more maple syrup.
  6. Serve the salad on a large platter or in individual bowls, garnishing with extra nuts and cranberries if desired.

Notes

For best flavor, dress the salad just before serving to avoid soggy greens. Chilling the salad briefly before serving adds a refreshing bite.
