Easy Lemon Blueberry Bread

This delightful bread is bursting with bright lemony goodness and juicy blueberries, making it perfect for breakfast or dessert.

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking pan by greasing a 9″x5″ loaf pan.
  3. Combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Mix the wet ingredients in another bowl: melted butter, eggs, lemon juice, lemon zest, and vanilla extract.
  5. Combine the wet and dry mixtures gently until just combined.
  6. Fold in the blueberries carefully.
  7. Pour the batter into the prepared pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool for about 10 minutes in the pan, then transfer to a wire rack.
  10. Make the glaze by mixing powdered sugar with lemon juice until smooth.

Notes

For a healthier alternative, use coconut sugar or maple syrup instead of sugar. Keep an eye on the baking time to avoid overbaking.
