The Ultimate Minestrone Recipe: A Hearty Hug in a Bowl

  • 2 tbsp Olive Oil
  • 4 cloves Garlic, minced
  • 1 medium Onion, diced
  • 2 Carrots, diced
  • 2 Celery Stalks, diced
  • 1 medium Zucchini, diced
  • 28 oz Canned Tomatoes, diced
  • 6 cups Vegetable Broth
  • 1 can Canned Beans, rinsed and drained
  • 1 cup small Pasta shapes (like ditalini or macaroni)
  • 2 cups Fresh Spinach or Kale
  • Fresh Basil, chopped
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients: Start by washing, peeling, and chopping all your veggies.
  2. Sauté the base: In a large pot, heat olive oil over medium heat. Add minced garlic and diced onion. Sauté for about 3-4 minutes until translucent.
  3. Add the veggies: Toss in the diced carrots and celery. Sauté for another 5 minutes until softened.
  4. Tomato time: Add canned tomatoes (juice and all) to the pot. Stir and let it simmer for 2-3 minutes.
  5. Pour in the broth: Add vegetable broth and bring to a gentle boil, then reduce to a simmer. Add chopped zucchini and season with salt and pepper.
  6. Introduce the pasta: After about 10 minutes of simmering, add the small pasta and cook according to package instructions.
  7. Add beans and greens: About 2 minutes before serving, stir in the rinsed beans and chopped spinach/kale.
  8. Finishing touches: Once everything is cooked, taste the soup and adjust seasoning as needed.
  9. Serve & enjoy: Ladle the minestrone into bowls, drizzle with olive oil, and sprinkle with fresh basil.
