Apple Walnut Chicken Salad

A delightful and refreshing salad combination of chicken, crisp apples, and crunchy walnuts, perfect for lunch or gatherings.

  • 2 cups cooked chicken, shredded or chopped
  • 2 crisp apples (Fuji, Honeycrisp, or Granny Smith), cored and chopped
  • 1 cup chopped walnuts
  • 1 cup chopped celery
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the chicken by shredding or chopping into bite-sized pieces. If grilling, season and cook until done, then let cool.
  2. Chop the apples into bite-sized pieces, leaving skin on and sprinkle with lemon juice to prevent browning.
  3. Dice the celery into small pieces for added crunch.
  4. Chop the walnuts into rough pieces, and consider toasting them for extra flavor.
  5. Mix mayo (or yogurt), lemon juice, salt, and pepper in a large bowl to create the dressing.
  6. Combine the chicken, apples, celery, and walnuts in the bowl with the dressing, folding gently.
  7. Chill the salad in the refrigerator for about 30 minutes before serving.

Notes

This salad can be made up to 3 days in advance. For freshness, add a splash of lemon juice before serving.
