Authentic Jamaican Curry Chicken

A flavorful and vibrant dish of Jamaican curry chicken, infused with rich spices and coconut milk.

  • 4 Chicken Thighs (skinless and boneless)
  • 1 tablespoon Curry Powder
  • 1 teaspoon Allspice
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne Pepper
  • 1 Hot Pepper (chopped)
  • 1 cup Chicken Stock
  • 2 cloves Garlic (minced)
  • 1 cup Coconut Milk
  • 1 Onion (chopped)
  • 2 tablespoons Vegetable Oil
  • Salt and Pepper to taste

Instructions

  1. Prep Your Ingredients: Chop your onions and garlic, measure out your spices, and cut your chicken thighs into bite-sized pieces.
  2. Heat the Oil: In a large skillet, heat vegetable oil over medium heat.
  3. Sauté the Aromatics: Add chopped onion and sauté for 3–5 minutes until translucent, then add garlic and hot pepper.
  4. Brown the Chicken: Add chicken thighs, seasoning with salt and pepper, and brown for about 5 minutes.
  5. Spice It Up: Sprinkle in curry powder, allspice, paprika, and cayenne; stir to coat the chicken.
  6. Add Coconut Milk and Chicken Stock: Pour in coconut milk and chicken stock, stir, and bring to a low simmer.
  7. Let It Cook: Cover and let simmer for 25–30 minutes, stirring occasionally.
  8. Adjust Seasoning: Taste and adjust with additional salt or spices as desired.
  9. Serve and Enjoy: Serve over rice or with warm roti and add fresh cilantro and lime for garnish.

Notes

For a lighter option, use light coconut milk. This dish can be stored in an airtight container and reheated.
