Avgolemono: Greek Lemon Chicken Soup

  • 3 large eggs

  1. Prep your ingredients: Gather all your ingredients, shred the chicken, and chop parsley. Rinse rice if using.
  2. Heat the broth: In a large pot, add chicken broth and bring it to a gentle simmer over medium heat.
  3. Add rice/orzo: Toss in rice or orzo, cooking according to package instructions (10-15 minutes) until tender.
  4. Prepare the avgolemono mixture: Whisk eggs and lemon juice in a medium bowl until frothy.
  5. Temper the mixture: Gradually add hot broth into the egg-lemon mixture while whisking constantly.
  6. Combine everything: Slowly pour the tempered mixture back into the pot with the broth and rice, stirring continuously.
  7. Add chicken and season: Stir in shredded chicken and season with salt and pepper to taste.
  8. Finishing touches: Simmer the soup for a few more minutes, avoiding boiling to prevent curdling.
