Bang Bang Chicken

A zingy delight with crispy chicken tenders coated in a creamy, spicy sauce, perfect for dinner or gatherings.

  • 1 pound chicken tenderloins
  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Oil for frying
  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon lime juice

Instructions

  1. Prepare the chicken: Blot the chicken tenderloins with a paper towel, season both sides with salt and pepper.
  2. Set up your breading station: In one bowl, add flour; in a second bowl, whisk the eggs; in a third bowl, place the panko breadcrumbs.
  3. Bread the chicken: Coat each piece in flour, dip into the egg, and then coat thoroughly with panko breadcrumbs.
  4. Heat the oil: Pour enough oil in a large skillet to cover the bottom about 1/4 inch deep and heat until it shimmers.
  5. Fry the chicken: Cook the breaded chicken in batches for about 3-4 minutes on each side until golden brown.
  6. Drain and cool: Transfer the crispy chicken to a plate lined with paper towels to drain excess oil.
  7. Make the sauce: In a separate bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice.
  8. Coat the chicken: Toss the crispy chicken tenders with the sauce until they’re all evenly coated.

Notes

For a gluten-free option, substitute panko and flour with crushed rice cereal or gluten-free breadcrumbs and almond flour or cornstarch.
