Mojito Watermelon

A refreshing watermelon dish inspired by mojito flavors, perfect for summer gatherings.

Ingredients

  • 2 tbsp. olive oil
  • 2 strips lime zest, sliced, plus 2 tbsp. lime juice
  • 1 tsp. sugar
  • Kosher salt and freshly ground black pepper
  • 1/2 small watermelon, rind discarded and sliced
  • 1/3 c. torn fresh mint
  • Flaky sea salt for serving

Instructions

  1. Prepare the watermelon by slicing it in half, then into wedges or cubes, and remove any seeds.
  2. Make the dressing by combining olive oil, lime zest, lime juice, and sugar in a bowl and whisking until smooth.
  3. Season the dressing with kosher salt and black pepper, adjusting to taste.
  4. Combine the watermelon in a large bowl and pour the dressing over it, gently tossing to coat.
  5. Add the torn mint leaves to the bowl and gently toss to combine.
  6. Plate the Mojito Watermelon on a serving platter and drizzle any remaining dressing on top, finishing with a sprinkle of flaky sea salt.
  7. Chill in the fridge for 10-15 minutes before serving to allow flavors to marry.

Notes

Best served chilled; adjustments can be made to suit personal taste preferences.
