The Ultimate Charred Shrimp and Avocado Bowl

A vibrant and flavorful bowl featuring charred shrimp, creamy avocado, and a zesty mango salsa, perfect for summer gatherings.

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp kosher salt
  • 1 cup bright yellow mango, diced
  • 0.25 cup purple onion, finely minced
  • 1 tbsp green jalapeno, minced
  • 2 tbsp fresh green cilantro leaves, chopped
  • 1 tbsp fresh lime juice
  • 0.5 cup mayonnaise
  • 1 tbsp sriracha
  • 1 large green avocado, sliced
  • 1 tbsp black sesame seeds

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rinsed long-grain white rice. Stir once, cover, and reduce the heat to low. Allow it to simmer for about 18-20 minutes.
  2. While the rice cooks, toss the peeled and deveined large shrimp with olive oil, chili powder, smoked paprika, ground cumin, and kosher salt in a mixing bowl.
  3. Heat a medium skillet over medium-high heat. Add the spiced shrimp in a single layer and cook for 2-3 minutes until pink and slightly charred, then flip and cook for another minute.
  4. In a separate bowl, combine diced mango, minced purple onion, jalapeno, chopped cilantro, and lime juice. Gently stir to combine.
  5. Mix the mayonnaise with sriracha and a splash of lime juice in another small bowl for the creamy drizzle.
  6. Once the rice is fully cooked, fluff it and divide it into 4 bowls. Top with charred shrimp and mango salsa, then fan out the avocado slices and drizzle with creamy mixture.
  7. Just before serving, sprinkle black sesame seeds over the top.

Notes

Feel free to substitute the shrimp with chickpeas or tofu for a plant-based version. Adjust the spice levels according to your preference.
