  • 2 Carrots, chopped
  • 2 Celery Stalks, chopped

  • 8 oz Egg Noodles
  • 8 cups Chicken Broth
  • 2 Bay Leaves
  • 1 tsp Dried Thyme
  • Salt and Pepper to taste

Instructions

  1. Prepare your ingredients: Chop your carrots, celery, onion, and garlic.
  2. Sauté the veggies: Heat a tablespoon of oil in a large pot over medium heat. Add the onions, garlic, and celery, sautéing until softened.
  3. Add the carrots and chicken, season with salt and pepper, and sauté for another 5 minutes.
  4. Pour in the chicken broth, bay leaves, and thyme. Bring to a gentle boil.
  5. Simmer the chicken: Reduce heat and cover, allowing the chicken to cook through (about 20 minutes).
  6. Shred the chicken: Remove and shred the chicken, returning it to the pot.
  7. Add the noodles: Return to a simmer and cook until noodles are al dente (about 6-8 minutes).
  8. Season and serve: Adjust seasoning as needed and discard the bay leaves before serving.
