  • 2 cups (300 g) whole kernel corn, drained
  • 1 cup (240 g) cream-style corn
  • 4 oz (115 g) cream cheese, softened and cubed
  • ¼ cup (60 g) unsalted butter, melted
  • ½ cup (120 ml) whole milk
  • 1 large egg
  • ½ cup (65 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (50 g) shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the softened cream cheese and melted butter in a large mixing bowl until smooth.
  3. Add the cream-style corn, whole kernel corn, and milk, stirring gently.
  4. Crack in the egg and whisk to combine.
  5. Sprinkle in the flour, sugar, baking powder, salt, and black pepper, stirring until just combined.
  6. Transfer the mixture to a greased 9×9 inch baking dish.
  7. Top with shredded cheddar cheese if desired.
  8. Bake for 45-50 minutes, until golden brown.
  9. Cool for 10 minutes before serving.

Notes

This casserole can be prepared ahead of time and refrigerated before baking.
