Creamy Cucumber Salad

A refreshing and creamy salad that’s perfect for summer gatherings, picnics, and barbecues.

Ingredients

  • 2 large English cucumbers
  • 1/2 small red onion
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  1. Prep your cucumbers: Peel and slice thinly. Optionally, sprinkle with salt and let sit to draw out moisture.
  2. Slice the onion: Thinly slice and soak in cold water to mellow the flavor.
  3. Whip up the dressing: Combine sour cream, mayonnaise, vinegar, and sugar in a bowl, stirring until smooth.
  4. Mix it all together: In a large bowl, combine sliced cucumbers, onion, and dressing, folding gently.
  5. Dill it up: Fold in fresh dill and garnish with some for serving.
  6. Chill and serve: Cover and let chill in the refrigerator for at least 30 minutes before serving.
