Loaded Baked Potato Soup

A comforting and creamy loaded baked potato soup with bacon, cheese, and green onions, perfect for winter gatherings.

  • 4 large russet potatoes, peeled and diced
  • 6 strips of bacon, chopped
  • 1 cup sharp or mild cheddar cheese
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup green onions, chopped
  • 1 medium onion, diced
  • 4 cups chicken or vegetable broth
  • Salt and pepper, to taste
  • Optional: paprika, for extra flavor

Instructions

  1. Prep the potatoes by peeling and dicing them into 1-inch chunks.
  2. Cook the bacon in a large pot over medium heat until crispy, then remove and set aside.
  3. Sauté the diced onions in the bacon fat until translucent, about 3-5 minutes.
  4. Add the diced potatoes and broth, bring to a boil, then simmer for 15-20 minutes until potatoes are fork-tender.
  5. Get creamy by blending the soup to your desired texture using an immersion blender.
  6. Mix in the cheese and sour cream until fully combined.
  7. Finalize by stirring in most of the crispy bacon and a few green onions.
  8. Serve the soup topped with additional cheese, bacon bits, a dollop of sour cream or Greek yogurt, and the remaining green onions.

Notes

This soup tastes even better the next day! Adjust consistency with more broth if it gets too thick.
