Creamy Mushroom Soup

A warm and comforting bowl of creamy mushroom soup filled with earthy flavors, perfect for chilly evenings.

Ingredients

  • 1 pound mushrooms (cremini or button)
  • 1 medium onion, diced
  • 34 cloves garlic, minced
  • 23 sprigs fresh thyme (or dried thyme, half the amount)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or half-and-half, or coconut cream)
  • 2 tablespoons olive oil (or butter for a hint of smoke)
  • Salt and pepper to taste

Instructions

  1. Sauté the diced onion in olive oil over medium heat for about 5 minutes until translucent.
  2. Add the minced garlic and fresh thyme, sauté for another minute.
  3. Stir in the sliced mushrooms, cooking for 8-10 minutes until browned.
  4. Sprinkle in salt and pepper to season.
  5. Pour in the broth, bring to a simmer and cook for 15 minutes.
  6. Blend the soup using an immersion blender until desired thickness.
  7. Stir in the heavy cream on low heat until well combined.

Notes

For variations, try using rosemary or sage, adding cheese or red pepper flakes, or swapping the cream for coconut milk for a vegan option.
