Quick & Creamy Tomato Garlic Pasta

  • 8 Garlic Cloves, minced
  • 3 cups Cherry Tomatoes, sliced in half
  • 4 tbsp Olive Oil
  • 1 cup Dry White Wine
  • 1 tsp White Sugar
  • 1 tsp Chili Flakes
  • 2 tbsp Tomato Paste
  • 2 cups Heavy Cream
  • 1 tbsp Flour
  • 1/2 cup Chopped Parsley
  • 8 oz Rigatoni Pasta
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • Salt & Pepper, to taste
  • Freshly Grated Parmesan, for serving

Instructions

  1. Start with the Pasta: Bring a large pot of salted water to a boil. Add your rigatoni and cook according to package instructions until al dente — usually about 10-12 minutes. Save about a cup of pasta water for later.
  2. Sauté the Garlic: While your pasta is cooking, heat the olive oil in a large skillet over medium heat. Add in the minced garlic and sauté for about 30 seconds until it’s fragrant.
  3. Spice It Up: Sprinkle in the chili flakes, followed by the halved cherry tomatoes. Stir together and add the teaspoon of white sugar.
  4. Add the Wine: Pour in the dry white wine and let it simmer for about 3–4 minutes.
  5. Tomato Time: Stir in the tomato paste, paprika, garlic powder, and a good pinch of salt and pepper.
  6. Creamy Dreamy: Pour in the heavy cream and stir. Adjust with reserved pasta water if sauce appears too thick.
  7. Thicken It Up: Sprinkle the flour and stir constantly to avoid lumps. Simmer for another 2–3 minutes.
  8. Combine It All: Drain the pasta and toss it into the sauce, mixing well.
  9. Serve it Up: Plate the pasta with a sprinkle of freshly chopped parsley and grated Parmesan.

Notes

For a lighter option, use half-and-half or a plant-based cream. Add grilled chicken or shrimp for a protein boost.
