Creamy Tuscan Salmon

A delightful dish combining fresh salmon, vibrant tomatoes, and a creamy sauce, inspired by Tuscan cuisine.

  • 4 Salmon fillets
  • 3 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • 1 cup Heavy cream
  • Salt and pepper, to taste

Instructions

  1. Prepare the ingredients: Start by gathering all your ingredients. You’ll want to have your salmon fillets, garlic minced, cherry tomatoes halved, spinach washed, and parmesan cheese grated.
  2. Sear the salmon: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper. Add salmon, skin-side down, and cook for 4-5 minutes. Flip and cook for 3-4 minutes until cooked through. Remove and set aside.
  3. Sauté the garlic: In the same skillet, add another tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until golden.
  4. Add cherry tomatoes: Toss in the halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  5. Create the creamy sauce: Slowly pour in heavy cream, stirring gently. Bring to a simmer, then sprinkle in parmesan cheese. Stir until melted and combined.
  6. Add spinach: Stir in fresh spinach until wilted.
  7. Return the salmon: Place seared salmon back into the skillet and spoon sauce over it for a minute.
  8. Finish with fresh basil: Sprinkle freshly chopped basil over the top just before serving.

Notes

Serve with creamy mashed potatoes or risotto to catch the sauce. Pair with white wine for an enhanced dining experience.
