Crispy Bang Bang Salmon Bites Bowls

A vibrant dish featuring crispy salmon bites topped with fresh veggies and a delicious bang bang sauce.

  • 1 lb skinless salmon fillets
  • 2 cups mixed vegetables (bell peppers, cucumber, carrots)
  • 2 cups jasmine rice
  • 1 avocado
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp Sriracha (adjust to taste)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the salmon fillets into bite-sized chunks and season with salt and pepper, drizzle with olive oil.
  3. Line a baking sheet with parchment paper and arrange the salmon bites in a single layer.
  4. Bake for 12-15 minutes, flipping halfway, until golden brown.
  5. While the salmon bakes, mix mayonnaise, sweet chili sauce, and Sriracha in a small bowl for the bang bang sauce.
  6. Chop the vegetables while the salmon cooks.
  7. Cook the rice according to package instructions.
  8. Assemble the bowls with rice, veggies, crispy salmon, and drizzle with bang bang sauce.

Notes

Serve in wide bowls and add a sprinkle of sesame seeds or scallions for garnish.
