The Ultimate French Onion Grilled Cheese

A comforting grilled cheese sandwich with caramelized onions and Gruyère cheese, perfect for any gathering or cozy night in.

  • 2 medium yellow onions, sliced thinly
  • 4 slices of rustic bread (like sourdough or ciabatta)
  • 2 tablespoons butter
  • 8 ounces Gruyère cheese, shredded
  • Optional: Fresh thyme or rosemary
  • Optional: Dijon mustard

Instructions

  1. Caramelize the onions: In a large skillet over medium-low heat, melt 2 tablespoons of butter. Add the sliced onions and stir to coat them in the butter. Sprinkle a pinch of salt over the onions. Cook slowly for about 20–25 minutes until caramelized and golden.
  2. Prepare your bread: Slice your bread into thick pieces (about 1-inch thick). Lay the slices out on a clean cutting board.
  3. Assemble your sandwich: On one slice of bread, layer a generous amount of caramelized onions and top it with a handful of Gruyère cheese. Press another slice of bread on top.
  4. Cook the sandwich: In the same skillet, add 1 tablespoon of butter over medium heat. Once melted, place your sandwich into the skillet. Grill for about 2–4 minutes until golden brown, then flip and cook the other side for another 2–4 minutes until the cheese is melted.
  5. Serve and enjoy: Remove the sandwich from the skillet, let it rest for a minute before slicing in half. Enjoy with a side of tomato soup.

Notes

For extra flavor, smear a thin layer of Dijon mustard on one side of the bread before layering. Serve with arugula dressed lightly with balsamic vinaigrette for a rustic touch.
