French Onion Grilled Cheese

A delicious twist on the classic French Onion Soup, combining caramelized onions and melted cheese between crispy bread.

  • 2 large sweet yellow onions
  • 2 tablespoons unsalted butter
  • 4 slices crusty baguette or sourdough bread
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1/2 cup beef or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions: In a skillet, melt the butter over medium heat. Toss in the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 20-25 minutes until beautifully caramelized.
  2. Season it up: Once your onions are golden brown, add the thyme and pour in the broth. Let it simmer for about 3-5 minutes.
  3. Prepare your bread: Slice your bread and spread butter on one side of each slice.
  4. Assemble the sandwich: On the unbuttered side of one slice, layer the caramelized onions and shredded cheese. Top with another slice of bread, unbuttered side facing in.
  5. Cook to perfection: Heat a non-stick skillet over medium-low heat. Cook the sandwich for about 4-5 minutes until crispy, then flip and repeat.
  6. Serve and savor: Once toasted and melted, cut the sandwiches diagonally and serve hot.

Notes

Serve with a side of tomato soup for a perfect pairing. Garnish with fresh herbs or a drizzle of balsamic for added flavor.
