Halloween Rice Bowls

A colorful and fun dish perfect for Halloween, combining rice, chicken or a protein substitute, and vibrant vegetables.

Ingredients

  • 1 cup rice (brown, white, or cauliflower)
  • 1 pound chicken breasts (or tofu/chickpeas)
  • Vegetables: bell peppers, broccoli, carrots, snap peas, and optional purple cabbage or black olives
  • Seasoning: salt, pepper, garlic powder, soy sauce
  • Garnishes: fresh herbs, avocado slices, sriracha

Instructions

  1. Cook the rice: Rinse 1 cup of rice and cook according to package instructions with a pinch of salt.
  2. Prep your protein: Season 1 pound of chicken (or alternate protein) with salt, pepper, and garlic powder.
  3. Cook the chicken: Heat olive oil in a pan and cook the chicken until browned and 165°F (about 6-7 minutes per side).
  4. Sauté the vegetables: Start with harder veggies, cooking them for about 3-4 minutes, then add softer veggies for another 2-3 minutes.
  5. Assemble your bowls: Layer rice at the base, add the sautéed vegetables, and sliced protein.
  6. Garnish: Sprinkle with herbs, avocado, or sriracha.
