Italian Wedding Soup

A warm and comforting Italian Wedding Soup filled with tiny meatballs, vibrant greens, and pasta in a rich broth.

  • 1 lb ground turkey
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves minced garlic
  • 1 egg
  • 1/4 cup chopped parsley
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 6 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 5 cups fresh spinach
  • Your choice of small pasta (orzo or acini di pepe)
  • Extra Parmesan cheese for serving

Instructions

  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan, minced garlic, egg, chopped parsley, salt, and pepper.
  2. Roll the mixture into small meatballs, about 1 inch in diameter, and place them on a lined baking sheet.
  3. Bake the meatballs for 15-20 minutes until cooked through and golden brown.
  4. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.
  5. Pour in the chicken broth and bring to a boil, then add Italian seasoning and any desired spices.
  6. Add your pasta and cook according to package directions, around 8-10 minutes.
  7. Stir in fresh spinach just before the pasta finishes cooking.
  8. Combine the baked meatballs with the soup and let them meld for about 5 minutes.
  9. Taste and adjust seasoning, then serve in bowls topped with freshly grated Parmesan.

Notes

This soup can be made ahead of time; just don’t add the pasta until you’re ready to serve to avoid mushiness.
