Mediterranean Orzo Pasta Salad

A vibrant and refreshing salad featuring orzo pasta, cherry tomatoes, cucumbers, olives, and feta cheese, perfect for summer gatherings.

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: Bring a medium pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente (about 8-10 minutes). Reserve a cup of pasta water.
  2. Combine the vegetables: In a large bowl, add the cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
  3. Make the dressing: Whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper in a small bowl.
  4. Combine orzo with the veggie mix: Drain orzo and rinse under cold water. Add to the vegetables and pour dressing over. Toss gently.
  5. Taste and adjust: Add more salt or seasoning as desired.
  6. Chill and serve: Refrigerate for at least 30 minutes before serving to meld flavors.

Notes

Can be made ahead of time; it tastes even better after a night in the fridge.
