Moroccan Cauliflower with Tahini-Honey

A vibrant dish featuring roasted cauliflower coated in warm spices and drizzled with a creamy tahini-honey sauce.

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cauliflower by cutting it into florets and tossing with olive oil, cumin, coriander, paprika, salt, and pepper.
  3. Roast the seasoned cauliflower on a baking sheet for 25-30 minutes, flipping halfway through.
  4. Whip together tahini, honey, lemon juice, and a pinch of salt for the sauce.
  5. Remove the roasted cauliflower from the oven and drizzle with tahini-honey sauce.
  6. Garnish with chopped parsley before serving.

Notes

This dish can be served warm or at room temperature and pairs well with additional fresh herbs or lemon slices.
