No-Bake Lemon Truffles

Delightful no-bake lemon truffles bursting with bright lemon flavor and creamy texture, perfect for any occasion.

  • 1 cup crushed graham crackers
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate chips (for coating)

Instructions

  1. Crush the graham crackers by wrapping them in a kitchen towel or placing them in a ziplock bag. Use a rolling pin to crush them into fine crumbs.
  2. Mix the crushed graham crackers, softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract in a medium bowl until well combined and creamy.
  3. Chill the mixture in the refrigerator for about 30 minutes.
  4. Roll a tablespoon of the mixture into a ball and repeat until all are rolled.
  5. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  6. Coat each truffle in the melted chocolate and place them on a parchment-lined baking sheet.
  7. Let the coated truffles set in the fridge for about 15-20 minutes.

Notes

For a tropical twist, try adding shredded coconut to the truffle mixture or rolling the truffles in it. These can also be made gluten-free by using gluten-free cookie alternatives.
